Spanish Potato Omelet
Ingredients
- Potatoes (½ cup, thinly sliced)
- Eggs - 4
- Salt - a pinch
- Pepper - ½ teaspoon
- Olive Oil - ½ cup
- Onion (Medium size, thinly sliced)
- Tomatoes - 2, roughly chopped
Method of Preparation
Break the eggs into a bowl. Add salt and pepper and whisk thoroughly.
Pour 1/2 cup olive oil into a non-stick pan and pour in the potatoes. Add salt and pepper to taste. Fry until golden brown
Pour in the onion and fry
Turn your heat to low and pour in the egg and allow to set for 7-8 minutes, then flip it over to fry the other side
Serve with tomatoes
