Banana Muffins
Ingredients
- Flour - 3 cups
- Brown Sugar - ½ cup
- White Sugar - 1 cup
- Cinnamon - 2 tablespoons
- Baking Powder - 2 tablespoons
- Baking Soda - 1 teaspoon
- Nutmeg - 1 teaspoon
- Salt - 1 teaspoon
- Ripe Bananas - 2, mashed
- Canola Oil - 1 cup
- Coconut Milk - 1 cup
Method of Preparation
Mix flour, brown sugar, white sugar, cinnamon, baking powder, baking soda, salt and nutmeg in a bowl.
In another bowl, mix mashed bananas, canola oil and coconut milk. Pour into the dry ingredient and mix together.
Put muffin cups in a muffin pan and add 1 scoop of the batter into each cup. Bake at 350°F for 30-35 minutes.
