Carrot Rice
Ingredients
- Roasted Peanuts - 1/4 cup
- Margarine - 1 tablespoon
- Onion - 1, Thinly sliced
- Fresh Ginger - 1 tablespoon
- Grated Carrots - 3/4 cup
- Salt and Pepper
- Rice - 1 cup, cooked
Method of Preparation
Blend the peanuts and set aside. melt the margarine and add the onions. Cook for 5 minutes.
Add in the ginger and fry for 1-2 minutes. Add the carrots and fry for 2-3 minutes. Add salt to taste and stir.
Reduce the heat and cover for 5 minutes. Add pepper to taste and the blended peanuts. Mix well.
Add cooked rice and stir thoroughly till the mixture is even. Garnish with lettuce or spinach.
